Smoked Cheese & Apple Muffins
Warning! Once you have tried these, you might not be able to stop. They are scrum-diddly.

The plan was to make some smoked cheese scones again this morning but I thought it might be fun to try something different. I had a little browse on Pinterest and finally asked Google what went well with smoked cheese. The answer was mainly smoked things and meat...but one person mentioned apple. To that person-thank you! Without you I may never have tried making these. I feel I may have to make some more again soon because the family etc seem to have eaten them...

1 egg, 100ml milk, 125g self raising flour (although on reflection 150-175g may have been better), 100g smoked cheese, 100g cheddar cheese, 100g grated apple,1 tsp baking powder, 1/2 tsp mustard powder, 1 tsp sage, salt and pepper
-Preheat oven to 200c
-Mix egg and milk in a small bowl
-In a large bowl, mix flour, baking pwder, mustard, sage, salt and pepper
-Grate apple and cheeses and add to the mixture.
-Mix through and finally add the egg mixture.
-Mix again and spoon into the muffin cases.
-Bake for around 20 minutes, until browning on top.
-Leave to cool for a few minutes.
-Eat! Nom nom nom.
