Flippin' Pancakes!


American Pancakes
A couple of days ago, I woke up early with the sudden need to make American pancakes. Don't ask me why. I hadn't dreamt about them or anything...Weird. Anywho, I looked through a couple recipes (as usual) and found one that I liked...and then tweaked it. It's adapted from this recipe here and makes 6-8 pancakes, depending on the size :)

1 cup flour, 1 tbs sugar, 3 tsp baking powder, 1/2 tsp salt, 1 egg, 3/4 cup milk, 2 tbsp melted butter, 1 tsp vanilla extract
-Preheat the cooker to medium high.
-Sieve the dry ingredients together.
-Mix the wet ingredients together.
-Add the wet mixture to the dry mixture. (Add more milk if you want them thinner.)
-Warm up a NON STICK pan and spray some Fry light (or heat up some oil and then pour out into a ramekin. No-one wants oily pancakes!)
-Cook for a couple minutes on each side.
-Pile up and eat with whatever you fancy!
(They also store well in the fridge for a couple of days or up to a month in the freezer!)
