Smoked Mackerel with Roasted Butternut Squash and Red Split Lentils

Apologies for the terrible photo. (This is becoming my new catchphrase! Haha.) My reason is because I wasn't planning on taking it but it was so surprisingly yummy, that I couldn't not. How's that for a review? It's healthy too, so what more could you want?
 Mmm...I want to eat it again.







1 smoked mackerel fillet, 1/4 butternut squash (average size), 1/3 cup red split lentils, handful of peas, 2 balls frozen spinach, salt, pepper, sage, 1 cup of vegetable stock, 1 tsp chopped garlic, oil






-Preheat oven to 180/200c
-Peel and cube butternut squash. Add to a small baking tray with oil, salt and pepper.  (Cook for 30-40 minutes)
-Add remaining ingredients except mackerel to a pan on medium heat. (Cook for 15-20 minutes)
-When lentils and squash are cooked perfectly, cook the smoked mackerel fillet for 1 minute in the microwave. (You could do it in the oven but the microwave is so much faster!)
-Combine in a bowl or plate and enjoy. Add a pinch of salt and pepper if needed.
-Eat! Nom nom nom!
