Hooray For Flapjacks


So, the weather's been a bit crappy here and everyone's been a bit down, so I thought... What would cheer everyone up? I know-flapjacks! They are super yummy and will definitely put smiles on people's faces if you make them. Super quick and easy. The sultanas and cinnamon can be left out if preferred or maybe swapped for some other dried fruit, chocolate chips, citrus peel, mixed spices, ginger.... Whatever takes your fancy. Enjoy! :)

Easy Peasy Flapjack

125g butter, 125g golden syrup, 125g sugar, 250g oats, 1tsp cinnamon, 1 handful of sultanas.

-Preheat the oven to 160°c
-In a pan, on medium heat, mix the butter, sugar, cinnamon and syrup until combined.
-When sugar and butter is dissolved, take off the heat and stir in the oats and sultanas.
-Line a baking tin (I used a 8x8 square tin) and pour the mixture in.
-Bake the flapjack until golden. 20-40 minutes depending on oven. Mine took nearer 40.
-Allow to cool and harden in the tin before removing or it will collapse.
-Cut into portions and serve.
-Eat! Nom nom nom...
