Super Cookies


Evening, you lovely people!
Time for a cup of tea and a scrummy cookie, don't you think?
Annoyingly, I can never seem to find a great cookie recipe. I can do biscuits, gingerbread, shortbread, cake etc but never a great, chewy cookie. I don't know why it's so hard to find!
Anywho, Lucy stayed over a couple of nights ago and we thought we'd have another attempt. She found a promising looking recipe online and we tried it out. 
They were actually good! The best ones we've done by far.
The recipe didn't seem to belong to anyone and since we made a couple of little tweaks, I'm going to share our version on here.


Chocolate Chip Cookies

280g plain flour, 170g unsalted butter, 240g brown sugar, 120g white granulated sugar, 1 egg + 1 egg yolk, 3 tsp vanilla extract, 1/2 tsp salt, 1/2 tsp baking powder, 200g chocolate chips

-Preheat the oven to 175c.
-Mix sugars and butter. 
-Add egg, yolk and vanilla and mix.
-In another bowl, mix flour, baking powder and salt.
-Slowly add the dry mix to the wet mix.
-Stir through the chocolate chips.
-Prep a baking tray and scoop heaped tablespoon-fuls onto the tray. 6-8 to a tray as the grow!
-Bake for around 15 minutes or until dry to the touch.
-Cool and eat! Nom nom nom.
